Choosing A Juicer
Fresh Juice is Delicious!
Fresh fruit and vegetable juice tastes incredibly good and a world apart from the processed cartons found in most supermarkets. Juicing raw fruit and vegetables is one of the best ways to get the maximum benefit from these foods. Juicers come in all shapes and sizes but generally the process of extracting the juice can be categorized as either masticating or centrifugal.
Centrifugal Juicers
Centrifugal juicers can be inexpensive and are sold by many high street retailers. These spin at high speeds of up to 10,000 RPM. As the fruit and vegetables are fed in they are chopped/ground and the spinning motion forces the juice out to the sides leaving the pulp behind. This process mixes air with the juice causing oxidization (the juice will turn brown quicker). The pulp usually remains fairly moist as not all of the juice has been extracted. The high speeds cause friction and in return heat which can have a detrimental effect on the enzymes and nurients present in the juice.
Masticating Juicers
Masticating juicers are generally more expensive and stocked by specialist retailers. The juice extracted is generally of a far higher quality both in terms of flavour and nutrition. They work by breaking up the fruit or vegetables and pressing the juice out, all at low speed (from 80RPM depending on model), maximum juice is extracted leaving the pulp relatively dry. This process is often referred to as cold pressing, no heat is created leaving nutrient rich, living juice. Masticating juicers really excel at juicing fibrous greens and are the juicer of choice for wheatgrass enthusiasts. As an added benefit many masticating juicers can produce pasta, smoothies, babyfood and purees.
Cooking
Proteins, Vitamins, Minerals and Enzymes are all destroyed or transformed into a less beneficial state by heat. Therefore juicing fresh raw ingredients ensures that more of the goodness in these foods gets into you!
